Vegan spud with a healthy mix of vegetables topped with Vegan Cheese

  1. Peel the potatoes. Approx 2 medium sized per person. 8 in total for 4 people.

  2. Use a fork to poke the potatoes so that they can boil quicker
  3. Place the potatoes in a pot with boiled water. Let it boil until the potatoes a soft (you can test by poking the potatoes with a fork)
  4. Cut the tomatoes, cucumber, broccoli, mushrooms

  5. Lightly fry the mushroom in a pan

  6. Boil the broccoli until soft
  7. Place the boiled potatoes in a ceramic bowl and add the cheese on top
  8. Bake the potatoes in the over at 250 degrees until the cheese melts
