  1. Preheat oven
  2. Oil the muffin tray or tins
  3. Use a small bowl and mix soy milk with apple cider vinegar
  4. Use a larger bowl to mix the flour, baking powder, baking soda and salt
  5. Use another bowl to mix the sugar, canola oil, lemon zest and vanilla extract
  6. Add soy milk and the vinegar mixture and stir to combine
  7. Add the dry ingredients and stir
  8. Add blueberries and spoon mixed ingredients into the muffin tray or tins
  9. Bake for 20-25 minutes
  10. Remove from oven and let it cool before removing from the tray or tins
